Salmon & Boiled Potatoes

Recipe by Betty Martin Doucette – Eskasoni, Unama’ki 

Ingredients:

  • Salmon fillets
  • Potatoes, peeled and cut into chunks
  • 1 onion, sliced
  • Salt and pepper (to taste)
  • Seafood seasoning

Instructions:

  1. Fill a pot with water and add the onion, salt, pepper, and seafood seasoning.
  2. Bring the water to a boil and let it simmer for about 20 minutes until the flavours are infused (you’ll smell the aroma).
  3. Add the potatoes to the pot and cook until they are almost tender.
  4. Gently add the salmon fillets to the pot. Simmer until the salmon is fully cooked, which won’t take long (approximately 5-7 minutes).
  5. Serve the boiled salmon and potatoes hot.

Tip: For the best flavour, use Listuguj salmon if available.
