Recipe by Betty Martin Doucette – Eskasoni, Unama’ki
Ingredients:
- Salmon fillets
- Potatoes, peeled and cut into chunks
- 1 onion, sliced
- Salt and pepper (to taste)
- Seafood seasoning
Instructions:
- Fill a pot with water and add the onion, salt, pepper, and seafood seasoning.
- Bring the water to a boil and let it simmer for about 20 minutes until the flavours are infused (you’ll smell the aroma).
- Add the potatoes to the pot and cook until they are almost tender.
- Gently add the salmon fillets to the pot. Simmer until the salmon is fully cooked, which won’t take long (approximately 5-7 minutes).
- Serve the boiled salmon and potatoes hot.
Tip: For the best flavour, use Listuguj salmon if available.
