Recipe by Helen Sylliboy – Eskasoni, Unama’ki
Ingredients:
- 1 whole fish (salmon, cod, or haddock), cleaned and gutted
- 2 cups bread cubes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 onion, minced
- 1 tablespoon chopped parsley
- 1/2 teaspoon sage
- 2 tablespoons melted butter
- 1/4 cup milk
Instructions:
Preparing the Stuffing:
- In a bowl, mix the bread cubes with salt, pepper, minced onion, parsley, and sage.
- Drizzle the melted butter over the bread mixture and toss lightly to combine.
- Add the milk and mix thoroughly until the stuffing holds together.
Stuffing the Fish:
- Stuff the prepared fish cavity with the bread mixture.
- Wrap the stuffed fish tightly in aluminum foil.
Baking the Fish:
- Preheat your oven to 350°F (175°C).
- Place the foil-wrapped fish on a baking tray and bake for 45 minutes.
Serving:
- Carefully unwrap the fish and serve hot.
